For many years I used the XXX but nowadays I think even handling them and I'd be on the floor. Last bushel was a 50/50 mix of mild and poblano. Delicious. BTW nothing goes into green chile but garlic, pork and green chile peppers. Spiky peppers, thanks to a dry summer. It needed the cilantro and about 2 tsp of crushed basil to reduce the heat a few degrees. It went down really well at our office Thanksgiving celebration, and people wanted the leftovers tomorrow.
